Pork Stir-Fry

Ingredients

- 500g (18oz) pork loin steaks, trimmed and cut into thin strips
- ½ Chinese leaf lettuce, shredded
- 432g (15¼oz) can pineapple chunks in natural juice, drained and 4 tbsp juice reserved
- 170g (6fl oz) hoisin stir-fry sauce
- 1 red chilli, deseeded if preferred, and chopped
- 1 tbsp oil

Method

1. Heat the oil in a large wok or frying pan over a high heat. Stir-fry the pork strips, in two batches, for 1 - 2 minutes per batch or until browned. Remove with a slotted spoon and set aside.

2. Add the Chinese leaf lettuce to the wok or pan and stir-fry for 1 minute or until beginning to wilt. Return the pork strips to the wok or pan along with the pineapple, pineapple juice and hoisin sauce. Stir-fry for 2 - 3 minutes or until piping hot throughout.

3. Scatter over the chilli and serve with rice noodles, garnished with fresh coriander leaves, if liked.
