Ingredients
- 250g fresh pineapple chunks
- 100ml white rum
- 150g coconut ice cream (or use vanilla and 1 tsp coconut extract)
- 1 tbsp lime juice
Method
1. Place the pineapple on a baking tray lined with baking paper and freeze until solid (or you can use ready-frozen pineapple chunks if you prefer).
2. Put the frozen pineapple, rum, ice cream and lime juice into a blender and blitz until smooth. Do not overmix as it may turn too watery.
3. Pour into glasses or a hollowed-out pineapple.
