Ingredients
- 2 tbsp mayonnaise
- 2 tbsp Greek yogurt
- 1 tbsp mango chutney
- ½ tbsp curry paste
- 150g cooked chicken breast, chopped into small pieces
- 1 red pepper, deseeded and finely diced
- 6 slices of white seeded bread
- 2 handfuls fresh spinach
- ⅓ cucumber, thinly sliced
Method
1. Combine the mayonnaise, yogurt, mango chutney and curry paste in a bowl. Reserve 3 tbsp of the mixture. Add the chicken to the remainder and mix well.
2. Spread the chicken mixture evenly over 3 slices of the bread. Scatter over the pepper and top with a few spinach leaves and cucumber slices.
3. Spread the reserved mayonnaise mixture over the remaining slices of bread and place on top of the filling. Slice in half diagonally or cut into quarters, if preferred. Serve straight away or cover and chill, ready to serve.
