Ingredients
- 400g linguine or spaghetti
- Salt and freshly ground black pepper
- 2 x 125g can sardines in tomato sauce
- ½ tbsp olive oil
- 1 small onion, finely sliced
- 300g cherry tomatoes, halved
- 1 red chilli, sliced
- 2 tbsp capers, drained
- Handful of fresh flat-leaf parsley, finely chopped, to garnish (optional)
Method
1. Cook the pasta in a saucepan of salted boiling water according to the pack instructions. Meanwhile, drain the sardines, reserving the tomato sauce.
2. Heat the oil in a frying pan over a medium heat. Cook the onion for 3 - 4 minutes, stirring, until softened. Add the cherry tomatoes and chilli and cook for 3 - 4 minutes, turning often, until the tomatoes start to burst. Add the reserved tomato sauce from the sardine cans and the capers and cook for 2 minutes until heated through. Season with salt and pepper.
3. Drain the pasta, reserving 1 - 2 tbsp of the cooking liquid. Add the pasta to the pan with the sardine mixture and the cooking liquid. Cook for 1 minute, tossing well. Divide between serving bowls and serve garnished with the parsley, if using.
