Ingredients
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1 small green chilli, thinly sliced
- 1 garlic clove, crushed
- 100g bacon lardons
- 2 x 400g can chickpeas, drained and rinsed
- 125g passata
- Salt and freshly ground black pepper
- 4 eggs
Method
1. Heat the oil in a large deep frying pan over a medium heat. Add the onion, chilli, garlic and lardons and cook for 2 - 3 minutes, until the onion begins to soften. Add the chickpeas and cook for 1 - 2 minutes, stirring occasionally.
2. Add the passata and 250ml boiling water. Bring to the boil, then reduce the heat to medium - low and simmer for 10 - 15 minutes until reduced. Season with salt and pepper.
3. Make four small indents in the mixture and crack an egg into each. Cook for 3 - 4 minutes until the whites are cooked or the eggs are cooked to your liking. Serve straight away.
