Ingredients
- 25g butter, softened, plus extra for greasing
- 400g frozen cherries, defrosted
- 3 tbsp brown sugar
- ½ tsp cinnamon
- 8 slices day-old white or brioche bread
- 3 eggs
- 400ml milk
- 1 tsp vanilla extract
Method
1. Preheat the oven to 190°C/Fan 170°C Fan/Gas Mark 5. Grease a medium baking dish. Place the cherries in the base of the dish and mix with the sugar and cinnamon.
2. Spread one side of each slice of bread with butter, then cut each in half diagonally to create 16 triangles.
3. Beat the eggs in a large bowl, then whisk in the milk and vanilla extract. Dip each piece of bread in the egg mixture and place buttered-side-up on top of the fruit, overlapping slightly. Pour any leftover egg mixture over the top. Set aside for 10 - 15 minutes to allow the bread to soak up the custard.
4. Bake for 30 - 35 minutes until the custard has set and the top is golden. Serve with whipped cream, if liked.
