Ingredients
- 2 tbsp Moroccan spice mix
- 250g (8oz) halloumi cheese, sliced into 8
- 1 small aubergine, trimmed and quartered
- 50ml (1½fl oz) vegetable oil
- 120g (4oz) chorizo sausage, diced
- 200g (6oz) chickpeas, drained
- 20ml (½oz) sweet chilli sauce
Method
1. Sprinkle Moroccan spice over halloumi and aubergine.
2. In a non-stick pan add the vegetable oil and fry both sides of the halloumi and aubergine until lightly coloured, approximately 2 minutes each side.
3. Add chorizo and cook for another minute.
4. Finally add chickpeas, and fry until cooked.
5. Arrange the aubergine and halloumi on a serving plate, dress with chorizo and chickpeas before drizzling sweet chilli sauce around the edge of the plate.
6. Serve with lemon and fresh watercress (optional)
