Spicy Tomato Salsa Filled Patatas Bravas

Ingredients

- 5 potatoes, cut into exact halves
- 1l (34fl oz) sunflower oil
- 5 fresh tomatoes, chopped
- 1 fresh red chili, chopped
- 1 egg
- 3 pieces garlic, crushed
- 3 cloves
- 1 tsp lemon juice
- 5 tbsp olive oil
- Salt to taste
- Black pepper powder to taste
- 2 sprigs fresh parsley

Method

1. Preheat the oven to 150°C/Fan 130°C/Gas Mark 2.

2. Scoop out the center of the potatoes with a small scooper.

3. On a baking tray put the potatoes and cover with sunflower oil. Cook in the oven for 45 minutes.

For the spicy tomato sauce:

4. In a pan, heat olive oil, add garlic and cloves, and saute.

5. Add to the pan the red chili and saute, then add the tomatoe. Cook for about an 1 hour over a low heat.

6. Season the sauce and blend.

For garlic aioli:

7. In a bowl break whole egg, add garlic, lemon juice and salt, mix well and start whipping it.

8. Add olive oil slowly to form an emulsion and whip till aioli is firm.

9. Moving back to the potatoes. Now deep fry the potatoes, take out on a paper towel and sprinkle with salt.

10. Fill the center of the potatoes with the spicy tomato sauce and top with the aioli.

11. Garnish with fresh chopped parsley.
