Ingredients

- 100g (4oz) plain flour
- 90g (3½oz) wholemeal flour
- 1½ tsp baking powder
- ½ tsp salt
- 45g (1½oz) granulated sugar
- 250ml (9fl oz) milk
- 1 large egg, lightly beaten
- 70g (3oz) melted butter
- Butter or oil for the pan
- 500g (1lb) mixed berries, fresh or frozen

Method

1. Combine the flours, baking powder, salt and sugar into a large mixing bowl.

2. In a separate bowl, mix the milk, egg and butter.

3. Pour the wet ingredients into the dry ingredients and mix well until combined. Leave for 10 minutes.

4. Heat a non-stick frying pan over medium heat and add butter.

5. Add a ladle (or 2, depending on pan size) of the mix into the pan. When they start to bubble, flip them.

6. Cook until the other side is golden brown.

For the berries:

1. Pour the berries into a saucepan on medium/low heat. When they start to soften, mash them gently.

2. Slightly raise the heat to medium and let the fruit reduce, so it becomes thick.

3. Spoon onto the stacked pancakes.
