Ingredients
- 2 tbsp oil
- 125g (4½oz) chorizo sausage, sliced
- 1 medium onion, diced
- 1 medium red pepper, diced
- 2 cloves garlic, finely chopped
- 1½ tsp smoked paprika
- 250g (9oz) paella rice
- Saffron, 1 pinch, steeped in 50ml (2fl oz) hot water
- 800ml (1½pt) fish or vegetable stock
- 300g (10½oz) frozen raw seafood, defrosted
- 150g (5½oz) frozen garden peas, defrosted
- 15g (½oz) fresh parsley, chopped
Method
1. Heat the oil in a paella pan or large saute pan over a medium heat. Add the chorizo and cook for 3 minutes.
2. Fry the onion and pepper over a medium heat, stirring frequently for 10 minutes until soft. Add the garlic and paprika then fry for a further minute.
3. Stir through the paella rice, then add the saffron and stock. Bring to the boil, then reduce to a simmer and cook, covered, for 15 minutes.
4. Add the seafood and cook for a further 10 minutes until the seafood is cooked through, loosening the rice with a little more hot water if needed.
5. Stir in the peas and take the pan off the heat, cover with foil and leave to rest for 5 minutes, sprinkle over the chopped parsley before serving.
