Ingredients
- 400g (14oz) sweet potatoes, cut into skinny chips
- 400g (14oz) prepared butternut squash, cut into skinny chips
- 1 tsp Cajun seasoning
- Low-calorie cooking spray
- 500g (1lb 1oz) lean turkey mince (5% fat or less)
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 tsp dried chilli flakes or chilli powder
- 4 large tomatoes, sliced
- 2 - 3 Little Gem lettuces, leaves separated
- Salt and pepper
Method
1. Pre-heat the oven to 220°C/Fan 200°C/Gas Mark 7.
2. Put the sweet potato and butternut squash fries into a really large non-stick roasting tin and sprinkle with the Cajun seasoning. Spray with low-calorie cooking spray, toss well and spread out in an even layer, making sure they have room to breathe (or they won't crisp up). Roast for 10 minutes.
3. Meanwhile, put the turkey, onion, garlic, chilli flakes or powder, a pinch of salt and some black pepper in another mixing bowl and mix well. Divide the mixture into 4 even pieces and shape into burgers. Remove the tin from the oven and flip the fries. Make 4 gaps among the fries and add the burgers. Roast for another 15 minutes, turning the burgers halfway, or until the burgers and fries are cooked.
4. While the burgers are cooking, arrange the tomatoes and lettuce leaves on plates. Place the burgers on top of the salad and serve hot with a big pile of fries.
