Cooking time: 25 minutes
Serves: 4

No nutritional information available, but this is a Slimming World Recipe.

Ingredients

- 500g new potatoes, halved lengthways and cut into thin wedges
- Low-calorie cooking spray
- 500g (1lb 1oz) courgettes, cut into small chunks
- 200g (7oz) cherry tomatoes, halved
- 3 lemons, each cut into 6 wedges or chunks
- 4 skinless and boneless salmon fillets
- ½ tsp harissa spices
- 2 tbsp fresh mint, chopped
- 50g (2oz) capers, drained and rinsed

Method

1. Pre-heat the oven to 220°C/Fan 200°C/Gas Mark 7.

2. Put the new potatoes in a large non-stick roasting tin and spray with low-calorie cooking spray. Toss well, spread out in the tin and roast for 10 minutes. Turn the potatoes then add courgettes, cherry tomatoes and lemons to the tin. Season lightly and roast for another 5 minutes.

3. Meanwhile, lightly season the salmon and sprinkle with the harissa. Put the salmon on top of the vegetables and roast until the salmon and vegetables are just cooked through.

4. Scatter over the mint and the capers and serve hot.
