Ingredients
- 300g (10½oz) baby pearl potatoes
- 1 tsp salt
- 15g (½oz) garlic butter
- 10g (¼oz) parsley, finely chopped
- 2 tbsp oil
- 2 x 175g (6oz) sirloin steaks
- 10 cherry tomatoes
- Salt and black pepper
- 8 asparagus spears
Method
1. Put the potatoes into a pan of cold salted water, bring to the boil and cook until tender. Drain, add garlic butter and chopped parsley, then swirl around in the pan. Cover with a lid and keep warm.
2. While the potatoes are cooking, remove the steak from the fridge.
3. When the potatoes are cooked, rub the steaks in the oil and season with the salt and black pepper.
4. Heat a griddle pan to searing hot then lay the seasoned steaks onto the griddle.
5. Cook steaks for 2 - 3 minutes on each side, pop the tomatoes and asparagus onto the griddle when you turn the steaks over.
6. Remove the steaks, cover in foil and allow to rest.
7. Serve the steaks with the garlic butter potatoes, griddled tomatoes and asparagus.
