Ingredients
- 1 orange, peeled and segmented
- Low-calorie oil spray
- 1 tsp Baharat spice blend
- ½ can chickpeas
- 1 tbsp water
- 2 wholemeal pitta breads
- 20g (¾oz) iceberg lettuce, shredded
- 50g (2oz) grated carrot
- 50g (2oz) grated pre-cooked beetroot
- A little hummus
Method
1. Place a saute pan over a medium heat, spray with the low-calorie oil add the orange and fry until it colours.
2. Remove from the pan and set aside. Spray the pan and add the Baharat. Top with the chickpeas, coat with the spice and add the water. Cook for 1 minute.
3. Set the spicy chickpeas aside to cool.
4. Pop the pittas in a toaster to warm through, then slice an opening to make a pocket. Divide the lettuce between the pittas.
5. Divide the carrot and beetroot between the pittas, and a little hummus. Top with the orange and finally the spicy chickpeas.
