Ingredients
- 80g (3oz) rolled oats
- 50g (1¾oz) almonds
- ¼ tsp salt
- 4 tbsp maple syrup
- 1 tsp vanilla extract
- 4 tbsp fat free yogurt
For the apple filling:
- 4 firm medium apples, peeled, chopped into equal bite size pieces
- ½ tsp ground cinnamon
- ½ tsp water/lemon juice
- 1 tbsp maple syrup
Method
1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4.
2. In a small bowl, stir together the rolled oats, almonds, salt, maple syrup and vanilla extract. Spread out on a lined baking tray and bake in the oven for 9 minutes. Remove from the oven and re-spread the mixture. Bake for a further 9 minutes. Remove from the oven and allow to cool.
3. Add the apples, cinnamon, water/lemon and maple syrup to a medium saucepan and cover. On a medium heat, cook the apples for 10 minutes, stirring to ensure they do not burn. Taste the apples to check softness and continue to heat until they are a desired texture before removing from heat and allowing to cool.
4. Add a spoonful of the apples to 4 tumblers, then a sprinkling of streusel, and repeat twice or until the apple is finished. Complete with a dollop of yogurt and a few bits of the streusel.
