Southwest Tilapia

Preparation Time: 10 minutes
Cooking time: 10 - 15 minutes
Serves: 6

If served as six portions, provides 224 cals, 9g fat (of which 3g saturates), 2g sugar and 0.3g salt per portion.

Ingredients

- 6 tilapia fillets (170g/6oz each)*
- 1 cup canned Italian diced tomatoes with mild green chilies
- ½ cup cubed avocado
- ½ cup frozen corn (thawed)
- ½ cup cubed cheddar cheese
- ½ tsp dried cilantro
- Cooking spray

*Cod, sole, hake, sea bass or monkfish can be used as an alternative to tilapia.

Method

1. Preheat the oven to 200°C/Fan 180°C/Gas Mark 5. Place fillets in a 15in x 10in x 1in. baking pan coated with cooking spray. Top with tomatoes, advocado, corn, cheese and cilantro.

2. Bake, uncovered, until fish flakes easily with a fork, 15 - 20 minutes.


Note: Unfortunately the accompanying source photo was the same as for the Mediterranean Tilapia recipe which is not representative of the ingredients listed above, and have been unable to find a suitable matching photo online.
