Ingredients
- 2 tsp olive oil, plus extra for brushing
- 75g (3oz) red, green or yellow pepper, deseeded and finely chopped
- 2 spring onions, thinly sliced
- Salt and ground black pepper
- 2 eggs
- Splash of milk
- 50g (2oz) Cheddar cheese, grated
- 2 tortilla wraps
- 2 tbsp salsa, plus extra to serve
Method
1. Heat 1 tsp of olive oil in a small, non stick saucepan over a medium heat. Fry the pepper and spring onions for 3 minutes or until tender. Season with salt and pepper, then transfer to a plate.
2. Add remaining oil to the saucepan and turn the heat to low. Beat the eggs in a bowl with the milk and season. Add to the pan and cook, stirring occasionally, for 5 minutes or until scrambled. Remove from the heat.
3. To make the quesadilla, place a tortilla wrap on a plate and arrange half of both the fried veg and scrambled egg on one half of the wrap. Top with half of both the Cheddar and salsa. Fold the other half of the wrap over to enclose the filling.
4. Brush a large, non stick frying pan with oil and place over a medium heat. Add the quesadilla and fry for 2 - 3 minutes on each side or until the outside is golden, and the Cheddar has melted. Transfer to a board and cut in half.
5. Repeat Steps 3 and 4 with the remaining tortilla wrap, veg, egg, Cheddar and salsa. Serve the quesadillas with extra salsa, if liked.
