Ingredients:
- 10 elderflower heads
- Grated zest and freshly squeezed juice of 2 lemons, plus extra juice to taste
- 2 litres of just-boiled water
- 500g (18oz) white granulated sugar
- Alcohol free sparkling wine or club soda, to serve
Method
1. In a large heatproof container, place the elderflower heads, lemon zest and juice. Pour the just-boiled water into the container to cover them. Use a saucepan lid to hold the flower heads under the water. Leave to infuse for at least 2 hours. Line a sieve/strainer with fine muslin.
2. Pour the mixture throught the lined sieve into another saucepan. Do this in batches if you do not have a big enough pan. When it has finished draining, bring the liquid to a simmer and add the sugar, dissolving it all to make the cordial.
3. Check the flavour and add a little extra lemon juice, if needed, before decanting into sterilised bottles. Seal and cool.
4. To serve, add 1 - 2 tbsp of the cordial to flute glasses and top up with sparkling non-alcoholic wine or club soda. Serve at once.
