Ingredients

- 1 onion, finely chopped
- 500g beef mince
- 780g passata with garlic and herbs
- 200g mushrooms, chopped
- 300g pasta shells
- 2 tsp oil

Method

1. Heat the oil in a large, deep, non-stick frying pan over a medium heat. Fry the onion, stirring, for 3 - 4 minute until beginning to soften. Add the mince and cook over a high heat for 4 - 5 minutes, stirring to break up any lumps, until browned.

2. Stir in the passata and mushrooms. Rinse the empty passata carton(s) with 300ml water in total and add to the pan. Stir in the pasta shells and bring to the boil. Reduce the heat to low and simmer, stirring occasionally, for 15 - 20 minutes until the pasta is just tender.

3. Season with salt and freshly ground black pepper. Serve sprinkled with chopped parsley and grated Parmesan, with crusty bread, if liked.
