Ingredients
- 1 tbsp olive oil
- ½ onion, finely chopped
- 150g cooked potatoes, chopped into cubes
- 100g corned beef, roughly chopped
- 40g frozen sweetcorn, defrosted
- 2 eggs, poached
- Small handful of fresh flat leaf parsley, finely chopped
Method
1. Heat ½ tbsp of the oil in a frying pan over a medium heat. Cook the onion for 4 - 5 minutes or until soft.
2. Add the remaining oil, potatoes and corned beef and fry for 6 - 8 minutes, pressing down with a spatula, until browned and the potatoes have plenty of crispy bits. Add the sweetcorn and toss together until the sweetcorn is warmed through.
3. Spoon into serving bowls and top with the poached eggs. Serve garnished with the parsley.
