Ingredients
- 500g packet frozen mixed berries
- 75g caster sugar
- 2 tsp cornflour
- 12 ready-made sweet pancakes
- Mixed fresh berries, to decorate (or use frozen, defrosted)
- Icing sugar, to dust
Method
1. Combine the berries, sugar, cornflour and 5 tbsp water in a saucepan. Bring to the boil over a medium heat, then simmer for 2 - 3 minutes or until the fruit has started to soften and the liquid thickened. Remove from the heat and set aside to cool.
2. Place one pancake on a serving plate or cake stand. Evenly spread over 1½ tbsp of the berry sauce. Repeat the layers, finishing with a pancake. Top with any remaining sauce and decorate with a handful of berries.
3. Dust with icing sugar and serve with whipped cream, if liked.
