Ingredients
- 800g watermelon, peeled and flesh cut into triangles*
- 1 tbsp white wine vinegar
- 1 tsp caster sugar
- 200g feta, diced
- Handful fresh basil leaves
*Alternatively, buy 600g ready-peeled and diced watermelon, draining off excess liquid.
Method
1. Place the watermelon in a large shallow dish and sprinkle over the vinegar and sugar. Toss through the diced feta.
2. Cover and chill for 2 hours. To serve, scatter over the basil leaves and add a light drizzle of olive oil, if liked.
