Ingredients
- 2 tsp olive oil
- 1 small red onion, cut into thin wedges
- 1 garlic clove, crushed
- 1 thick cut bacon rasher, finely chopped
- 300g passata
- ½ tsp Italian dried herbs
- Pinch of sugar
- 100g spaghetti, broken in half to fit the pan
- Salt and freshly ground black pepper
Method
1. Heat the oil in a medium saucepan over a medium heat. Cook the onion, garlic and bacon for 4 - 5 minutes, stirring, until the onion is soft.
2. Add the passata, dried herbs, sugar, spaghetti and 150ml just-boiled water, stir, then bring to the boil. Reduce the heat slightly and simmer rapidly for 9 - 10 minutes, stirring often, or until the spaghetti is cooked and the sauce is reduced. Keep an eye on the pan as you may need to add more boiling water if the mixture looks too dry.
3. Serve garnished with fresh basil leaves and with plenty of grated Parmesan, if liked.
