Ingredients
- 2 red onions, sliced
- 1 tbsp vegetable oil
- 3 garlic cloves, thinly sliced
- 125g kale, stalks removed
- 6 large free-range eggs, whisked
- 150g reduced fat salad cheese, crumbled
- Salt and freshly ground black pepper
Method
1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4. Add the onions to a frying pan along with the oil. Fry for 6 - 7 minutes, stirring, until softened, then add the garlic and kale. Cook for a further 2 minutes.
2. Transfer the mixture to a bowl and add the eggs and salad cheese. Season with salt and pepper.
3. Lightly spray a 15cm round ovenproof dish or non-stick pie tin with cooking oil and line the base with baking paper. Pour in the egg mixture. Bake for approximately 25 minutes, or until just set and golden. Serve hot or cold with a tomato and spinach salad, if liked.
