Ingredients
- 4 plain bagels
- 2 tbsp flaked almonds
- 60g icing sugar
- 225g soft cheese
- 150g fresh blackberries
Method
1. Cut and toast the bagels.
2. Heat a small non-stick frying pan over a medium heat and toast the almonds for 3 - 4 minutes, shaking the pan as you cook. You will see the colour turning brown. Do not leave unattended, as they burn quickly.
3. Meanwhile, sift the icing sugar and combine in a food processor with the soft cheese. Process until smooth. Add the blackberries and give one more pulse to chop and mix through.
4. Spread the soft cheese mixture over the toasted bagel bases, then top with toasted almonds and bagel tops.
