Ingredients
- 8 large flat mushrooms
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- Salt and freshly ground black pepper
- 4 large brioche buns
- 4 tbsp garlic mayonnaise, or use plain
- 40g leaf salad
- 1 large tomato, sliced
- 125g mozzarella, drained and cut into 4 slices
- 85g pesto
Method
1. Place the mushrooms, vinegar and oil in a bowl, then season with salt and pepper. Toss to coat.
2. Preheat an air fryer to 180°C for 3 minutes.
3. Place the mushrooms in the air fryer basket. Cook for 12 minutes, turning halfway through cooking time, or until tender.
4. Spread the bun bases with the mayonnaise, then top with salad leaves, tomato, mozzarella, mushrooms and pesto. Sandwich together with bun tops. Serve with fries and tomato ketchup, if liked.
