Ingredients
- 750ml bottle red wine
- 2 cinnamon sticks
- 2 star anise
- 4 cloves
- 2 strips of lemon zest
- 4 tbsp caster sugar
- 4 tbsp brandy or port (optional)
- 1 orange, sliced
Method
1. Put the red wine, cinnamon sticks, star anise, cloves, lemon zest and sugar in a large saucepan over a low - medium heat. Bring to a simmer and heat gently for 10 minutes. Do not allow to boil. Remove from the heat and leave to infuse for 1 hour.
2. Return the pan to a low heat and heat gently, stirring, until hot. Stir in the brandy or port, if using, then ladle into heatproof glasses. Add a slice of orange to each glass, and decorate with a sprig of rosemary, if liked. Serve straight away.
