Takes: 40 minutes (plus cooling time)
Serves: 12 (makes)

Ingredients

- 75g unsweetened muesli
- 160g wholemeal self-raising flour, or use white
- 1 tsp baking powder
- 80g sultanas
- 2 tsp finely grated orange zest
- 80ml fresh orange juice
- 2 tbsp maple syrup
- 2 eggs
- 80ml buttermilk
- 80ml vegetable oil
- 1 tsp vanilla extract
- 1 medium pear, peeled, cored and roughly grated
- 1 medium carrot, roughly grated

Method

1. Preheat the oven to 180°C/Fan 180°C/Gas Mark 4. Line a 12-hole muffin tin with paper cases.

2. Combine 50g of the muesli, the flour, baking powder and sultanas in a large bowl. Place the orange zest, juice, maple syrup, eggs, buttermilk, oil and vanilla extract in a separate bowl and whisk to combine. Stir in the pear and carrot.

3. Add the pear mixture to flour mixture and stir until just combined - do not overmix; the mixture should still be lumpy. Spoon the mixture into the paper cases. Sprinkle with the remaining muesli.

4. Bake for 30 minutes or until a skewer inserted in the centre of a muffin comes out clean. Leave the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Serve.
