Ingredients
- 500ml almond milk, plus extra to serve
- 200g jumbo porridge oats
- 2 tbsp almond butter
- 1 tsp baking powder
- 1 egg, beaten
- 1 small ripe banana, mashed
- ½ tsp almond extract or 1 tsp vanilla extract
- 450g blueberries, plus extra to serve (optional)
- 30g whole, skin-on almonds, roughly chopped
- Fat-free yogurt and honey, to serve (optional)
Method
1. Heat the oven to 200°C/Fan180°C/Gas Mark 6. Mix all of the ingredients together in a large bowl.
2. Tip into a 2l ovenproof dish and bake for 30 - 35 minutes, until piping hot in the middle.
3. Serve warm with a little extra milk or yogurt, honey and more blueberries, if you like.
