Ingredients
- 12 chicken wings, tips removed
- 1 tbsp dried oregano
- 1 heaped tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp sweet paprika
- 1 tsp garlic granules
- 1 tsp sea salt
- 80g Greek yogurt
- Pomegranate seeds, to garnish
- Freshly chopped coriander, to garnish
For the sticky pomegranate glaze:
- 1 tbsp rose harissa paste
- 2 tbsp pomegranate molasses
- 1 tbsp honey or maple syrup
- 1 tbsp dark soy sauce
Method
1. Place the chicken wings into a bowl, along with the oregano, spices, garlic granules, salt and yogurt. Give it a good mix until the ingredients are fully combined. Cover, then pop into the fridge overnight or for at least 2 hours.
2. When you are ready to cook, thread the wings onto long flat skewers. Set up the BBQ for direct cooking over the grill - get your coals nice and hot.
3. Place the wings onto the BBQ to cook suspended directly over the charcoal, turning occasionally. This will take around 12 - 14 minutes. Make sure the wings reach an internal temperature of at least 75°C.
4. For the glaze, combine the rose harissa, molasses, honey or maple syrup, and soy in a small bowl, then brush most of it onto the wings during the last 5 minutes of cooking. Garnish with pomegranate seeds and chopped coriander and brush over the remaining glaze.
